The word gourmet is used all too easily in Egypt these days. Many seem to think that exotic ingredients constitute a gourmet dish, but just as important is execution and preparation. Once you get that balance down, then you have yourself gourmet food and it’s something that The Nile-Ritz Carlton is channeling with an exciting new menu at Italian restaurant, Vivo.

Under the guidance of Chef Carmine, the Vivo kitchen has put together a selection of delicious-sounding gourmet pizzas that redefine this most popular of classic Italian food, while taking inspiration from his hometown of Rome and two-Michelin star chef, Oliver Glowig, who took over Vivo last October with a special white truffle menu.

Three is the magic number for Vivo here and the trio of pizza they’ve whipped up sound mighty delicious. The Pizza Delizia brings together a simple, light combination of arugula, sun-dried tomato, olives and blue cheese.

Looking for a seasonal dose of summer seafood? Look no further the Pizza Mare, which is topped with mussels, calamari, shrimp and orange cherry tomato.

Truffle oil is valuable commodity in the best kitchens and Chef Carmine has made good use of it in the third option, the Pizza Gusto, which also includes flavoursome smoked provola cheese and wild mushroom.
